Grapefruit, Avocado, and Red Onion Salad with Lime Vinaigrette
4 grapefruit, sectioned
2-3 avocados, diced
1/2 red onion, sliced
2 tablespoons freshly squeezed lime juice
3 tablespoons extra virgin olive oil
1 teaspoon honey (I used sugar-free)
Salt to taste
Prepare vinaigrette: combine lime juice, extra virgin olive oil, honey, if using, and whisk together. Add salt to taste; set aside.
Section grapefruit and place into large bowl.
Slice onion and add to grapefruit.
Last, peel and dice avocado, add to grapefruit and onion, drizzle on vinaigrette, and gently toss to coat.
